When someone is leaving, you show respect by giving back to the company that made you who you are. Translation: You lose on your way out. That has been a tradition followed by a lot of old school veterans in the business, which is a tradition that Undertaker himself followed at WrestleMania 33.
He lost at WrestleMania 30 because Vince thought it was the end of Undertaker that night (which it wasn't), but it was thought to be and that's why Vince had Undertaker lose due to tradition. That's the same reason why Undertaker lost to Roman Reigns this year.
